    • 8oz super-firm tofu
    • ½ teaspoon of sea salt
    • 1 teaspoon pepper
    • 1 tablespoon cornstarch
    • 1 tablespoon olive oil

    For the curry-

    • 1 cup spinach
    • 2 cups of water
    • 1 tablespoon olive oil

    • 1 teaspoon pepper
    • ½ teaspoon salt
    • 1 teaspoon cumin powder

    Instructions

    1. Cut the super-firm tofu into small cubes. Marinate tofu cubes with salt and pepper for 15 minutes. Then toss them with cornstarch.
    2. Heat olive oil in a wide frying pan. Shallow fry the tofu cubes until they are slightly brown. Keep them aside.
    3. Boil the spinach in 1 cup of water. Strain and make a fine paste.
    4. Heat the remaining olive oil. Add star anise and cinnamon stick. When you get a nice aroma to add onion paste, ginger-garlic paste, tomato paste, vegan yoghurt, spinach paste, salt, pepper, and cumin powder. Cook for 4 to 5 minutes.
    5. Add the remaining water. Let it come to a boil. Then add the shallow fried tofu cubes. Cook on a medium flame for 10 minutes.
    6. Serve hot.
