Vegan Tofu Spinach Curry

This is one of our favorite recipes. Tofu Spinach Curry is a delicious and quick entree to make. It’s a classic Indian dish that will please everyone. It’s very filling, and it’s also a great protein source.

Ingredients
For frying tofu-
- 8oz super-firm tofu
- ½ teaspoon of sea salt
- 1 teaspoon pepper
- 1 tablespoon cornstarch
- 1 tablespoon olive oil
For the curry-
- 1 cup spinach
- 2 cups of water
- 1 tablespoon olive oil
- 1-star anise
- 1-inch cinnamon stick
- 2 tablespoons onion paste
- 1 tablespoon ginger-garlic paste
- 2 tablespoon tomato paste
- 2 teaspoons vegan yogurt
- 1 teaspoon pepper
- ½ teaspoon salt
- 1 teaspoon cumin powder
Instructions
- Cut the super-firm tofu into small cubes. Marinate tofu cubes with salt and pepper for 15 minutes. Then toss them with cornstarch.
- Heat olive oil in a wide frying pan. Shallow fry the tofu cubes until they are slightly brown. Keep them aside.
- Boil the spinach in 1 cup of water. Strain and make a fine paste.
- Heat the remaining olive oil. Add star anise and cinnamon stick. When you get a nice aroma to add onion paste, ginger-garlic paste, tomato paste, vegan yoghurt, spinach paste, salt, pepper, and cumin powder. Cook for 4 to 5 minutes.
- Add the remaining water. Let it come to a boil. Then add the shallow fried tofu cubes. Cook on a medium flame for 10 minutes.
- Serve hot.
