Creamy Carrot Soup

Serving 4



✓ 2 carrots grated

✓ ½ can chickpea

✓ 2 cups vegetable broth

✓ 2 onion sliced

✓ 1 teaspoon minced garlic

✓ 1 teaspoon grated ginger

✓ 4 tablespoons coconut milk

✓ Salt to taste

✓ 1 teaspoon paprika

✓ 1 teaspoon pepper

✓ ½ teaspoon cumin powder

✓ 1 teaspoon chopped cilantro




1. Take a large saucepan. Add vegetable broth, grated carrots, chickpea, salt, onion slices, garlic, and ginger. Cook for at least 15 minutes. Then turn off the heat and let the soup come to room temperature. Then blend it smoothly in a blender.

2. Pour the blended soup in the saucepan again. Let it come to a boil. Then add coconut milk, paprika, pepper, cumin powder, and chopped cilantro. Cook for 4 to 5 minutes. The soup will become thick by this time. Turn off the heat.

3. Garnish the soup with a little bit of pepper and chopped cilantro. Serve hot.
